Which is the best Blaziken defense move set?

I know it’s a bit stupid to use rare candies maxing out a Blaziken at IV 89% (att 12/def 15/sta 13) on day 1 of Gen 3 launch, the current move set is given Fire Spin/Stone Edge, I and my son are a fan of Blaziken. I know the fire type is not good for defensive use, it’s just our favorite Pokémon out of gen 3. If I use fire type as attacker, I still have many choices from my collection. For the gym placement, should I TM from Fire Spin to Counter for defensive move?

Please kindly offer some advices about the better defensive move for Blaziken. Thanks a lot!!
