What is the strongest Defensive Pokemon?
I am looking through the data and unfotunately I cannot find the answer to this one. Also, I am wondering what does stamina affect. Does stamina amount to number of attacks a pokemon can do as a defender? In general, a more in depth answer would be appreciated.

The pokemon with the highest base defense and highest base HP has the highest longevity barring the incidence of moves, never mind CP, which is just an aggregate--Slowbro is pretty up there. Mewtwo exceeds Slowbro in this category, while Articuno also has a very high base defense (but lower HP than Slowbro). Cloyster has a defense stat around Slowbro's due to the way this game calculates it, despite its defense stat being high in the main games (as this game aggregates the defense, special defense, and speed stats of the pokemon in the main games for their defense stat here).
Snorlax has modest defense (slightly sub-Cloyster) but a huge base HP, so its longevity is huge and possibly the largest.
