Evolution Moveset

TL;DR: Random.
Some people is collecting data, evolving dozens of Pidgeys, but is pretty hard to have a pool large enough to give an absolute answer. For now, the most likely rule is that every move is randomly rerolled. We don't know if any specific Pokémon or move make an exception.
